Goose eggs are available only a short time in the Spring. Highly sought after for baking, each goose eggs equals approximately 3 medium chicken eggs. Their yolks are notably richer than chicken eggs and that is reflected in the scrumptious recipes you can make. We find one goose egg makes the perfect omelette for two.
