Our managers for Foothills Market had a family situation come up that interferes with the market time, so unfortunately, we are going to be closed for this week.

Let’s talk salad this week. Foothills Market has several items this week that can come together as a great green salad. We have two different kinds of lettuce – a mix of tender leaves grown in aquaponics, and the standard salad mix used in many restaurants – Salanova. Both have a mix of green and red leaves so it is a feast for the eyes as well as your stomach!

Add to that base of lettuce some of the other items available on the market this week, like spinach, arugula, or celery. For something a little different, boil an egg – maybe a duck egg? – to add to the greens. Or maybe you would like to brown and season some local ground beef and make a delicious taco salad.

Shop the market between now and 5:00 p.m. Wednesday. We’ll have your order ready for pickup on Thursday.

Human beings are not the only creatures who are glad to see the spring-like weather – the hens and ducks are as well! That means eggs are back on Foothills Market!

We have both chicken and duck eggs available on the market this week. Thanks to the longer days, our hens back to laying after taking most of the winter off. If you’ve had farm-fresh eggs, you know store eggs can’t compare. Our growers’ hens are free-range, which means their varied diet leads to that dark orange yolk that is full of nutrients. If you’ve never tried duck eggs, this might be a good opportunity – they have bigger yolks and a creamy texture that takes baked goods to the next level (and makes a great fried egg sandwich)!

Looks like a week of spring-like weather ahead, and Foothills Market has greens, greens, greens!

Offerings this week on the market include arugula, collard greens, lettuce (both heads and salad mix), mustard greens and pac choi. Pick up one, or plan your menu with a different type of greens each night!

Place your order between now and 5:00 p.m. on Wednesday, although earlier is probably better since quantities are limited at this point in the season. We’ll have your order ready for pickup on Thursday.

Foothills Market is open for the week!

This week, let’s focus on the beef available on the market. We have two vendors offering beef that is raised locally, mostly on grass, and treated humanely throughout their lives – no feedlots. The beef is also processed locally, through USDA-inspected facilities. We have a range of different cuts, from ribeye steaks to roasts to lean ground beef – no fillers. What you get is fresh and natural, and prices are competitive with what you’ll pay at the big chains.

The sun is shining today in Foothills Market country, and it’s a little easier to believe spring is on its way!

Last week’s message talked about some of our offerings in sweet spreads, and we’re going to continue that thought this week. We have a new product on the market – Kumquat Marmalade. According to the Ball Blue Book, marmalade is “a soft fruit jelly with small pieces of fruit or peel suspended in the transparent jelly.” Marmalade is often made with citrus, like the version we have on the market this week.

Put together your order between now and Wednesday at 5:00 p.m., and we’ll have it ready for you on Thursday afternoon for pickup.

Let’s talk sweets this week on Foothils Market. Our vegetable offerings are pretty thin, but we had a good variety of homemade spreads that bring a taste of sweet summer fruits to these dreary winter days.

Most people are familiar with jams and jellies. We have a lot of favorites – grape, blackberry, blueberry, and strawberry. Sometimes people shy away from jams because of the high sugar content, but our growers also offer lower-sugar versions of some popular varieties. We also offer some products that are not typical, such as an old-fashioned peach conserve. Like jam, conserve is made with fruit and sugar, but the recipe also includes nuts and sometimes secondary fruits like raisins. This makes a conserve good as a sweet accent to meats, as well as giving an extra crunch on a biscuit or toast.

Shop the market for our sweet spreads, beef, or baked goods while we wait for spring vegetables. Place your order by 5:00 p.m. Wednesday and we’ll have it ready for pickup on Thursday afternoon.

Fortunately, Foothills Market has a little taste of spring available, in the form of Spring Salad Mix from the aquaponics house at Happy Horseshoe Farm. It’s bright green, very tender and sweet (for lettuce).
