These muffins are made with cornmeal ground from dent corn grown on the Happy Horseshoe Farm (either Panted Mountain or Bloody Butcher). The muffins are darker than regular cornmeal muffins thanks to the multiple colors of the corn kernels that go into making the meal. They also have a somewhat nutty flavor that's different from regular corn muffins. They are perfect as a side for chili or bean soup but are also tasty enough to eat alone (or maybe with some butter and honey!).
