Minute steak (also known as cube steak) is a tenderized piece or round or top sirloin that is cut thin. It cooks quickly when fried, and is also great in other recipes, including with peppers, tomatoes and/or onions, or cooked in the crock pot. Raised on our farm in Logan County (between Scranton & Subiaco), our Black Angus/Charolais was pasture and grain fed. All of our meat is processed by Key’s Family Butcher Shop in Van Buren, a USDA inspected facility, with each package vacuum sealed and frozen. Each package is .91-.97 lbs. and is priced at $6.55.

Garlic scapes are thin, curly, green stems from the center of garlic plants. Young ones are tender and delicious. They have a milder taste than the cloves, similar to shallots or chives. A staple of gourmet restaurants! They can be diced up finely and added to various dishes for extra flavor, or sautéed in olive oil and enjoyed on their own. These are harvested to order from our elephant garlic. Refrigerate long term or dice and freeze what you don't need immediately.
